
3 cups whole wheat flour
3 cups cornmeal
3 cups all-purpose flour
2 tablespoons salt
1/2 cup sugar
3 1/2 tablespoons double-acting baking powder
Mix together all ingredients in a large bowl or ziplock bag. Whisk to sift. Store in plastic container.
To make pancakes:
Makes 8 4-5” pancakes
1 egg
1 cup milk
2 tablespoons melted butter
1 cup whole grain and cornmeal pancake mix
Combine egg, milk, and melted butter in a large bowl. Beat slightly with a fork.
Add the pancake mix. Stir quickly to combine.
Cook on preheated griddle.
Add:
blueberry
chocolate chip
banana
Cook until bubbles show on top; check underside to see if they have browned properly. Serve immediately, or store in warm oven on sheet pan - spread out, do not pile, steam produced by the stack will make the cakes flabby.
Serve with Sugarloaf maple syrup
